
Sweet Potato Gnocchi with Sage Brown Butter
Fluffy, autumnal gnocchi bathed in sage butter.

- 2 medium sweet potatoes, baked and peeled
- 1.5 cups all-purpose flour
- 1/4 tsp nutmeg, grated

- 1 egg, beaten
- 4 tbsp unsalted butter
- 8 fresh sage leaves
- 1/3 cup Parmesan cheese, freshly grated

Method
In a bowl, mash the baked sweet potatoes. Mix in the flour, nutmeg, and salt. Add the beaten egg and combine to form a dough.
On a floured surface, roll pieces of dough into 1-inch thick ropes. Cut into 1-inch gnocchi pillows. Using a fork, create grooves on the cut gnocchi.
Boil salted water in a pot. Add the gnocchi and cook until they float to the top (approximately 2 minutes). Once cooked, drain them.
In a pan, melt the butter on medium heat until browned. Add fresh sage leaves and let them wilt slightly.
Add cooked gnocchi to the pan, tossing to coat them in brown butter and sage.
Serve the gnocchi topped with freshly grated Parmesan cheese and a sprinkle of pepper to taste.
